this is because in the story the princess and the young man love each other and the king does not like the young man so he puts him to the challenge of picking a door. one door has a pretty maiden and the other has a vicious animal that will eat him. he knows that the king will not pardon him for wanting to marry his daughter since he is a commoner and she a princess. the doors have never been locked before and if the king won't pardon him then the king wouldn't have locked the doors, so he couldn't have either, the maiden or death. he is depending on the princess who is so called true love to save him or choose the right choice.
