$x = \frac{ - b}{2a}$
For
$y = {x }^{2} + bx + 5$
a = 1

For the x- coordinate of the vertex to be 2,

$2 = \frac{ - b}{2(1)}$
b = - 4

It seems you omitted the sign of the b.

If it is
$y = {x}^{2} - bx + 5$
Then
b = 4
