1Minestrone (min-ih-STRO-nee) is one of the most popular Italian dishes and is probably eaten more throughout Italy than pasta is. Minestrone is the name for a variety of thick soups made with vegetables. People often add onions, celery, carrots, squash, and potatoes to this soup, since there is no set recipe. It is usually made with whatever vegetables are in season at a certain time. It can be vegetarian, can contain meat, or may even have pasta or rice. Minestrone always has a jumble of ingredients, since you can add any kind of vegetables, meats, or pastas you like.
Since Gino's family is originally from Italy, he decided to research Italian cooking for a class project. After reading this passage, he interviewed an Italian chef from a neighborhood restaurant. During his questioning, Gino took notes about the chef's family recipes, where he got his training in Italian cooking, the minestrone recipe used in his restaurant, and his family background.
